Waterstones are a man-made sharpening stone designed to be softer than an oilstone. The softer grade of stone allows it to be used with water as the lubricant versus oil to develop a fast cutting slurry. The Norton Waterstone System was designed in a carefully planned sequence to create sharpening efficiency. You get the level of abrasiveness you need at each stage.

Questions & Answers about Norton Combination Grit Waterstones 8 x 3 x 1:
2012-09-15A shopper asked: what's the best grit for kitchen knives?
+Expand Answers
2012-09-17Ryan L: Technically, it depends on the type of metal. If the knife is of very high quality (very hard) metal, you can sharpen with the 4000 grit stone. In general, on most mid-range and low end knives, the 1000 grit is an excellent choice and produces amazing results.
